Debugging a production Prestashop website that is generating 500 server errors.

Project is to debug a production Prestashop website that is generating 500 server errors. The website is running version 1.7.8.11 of Prestashop with multiple addons on PHP 7.4.
The 500 server error looks like this and is clear we're running out of DB connections:
User XXXXX already has more than 'max_user_connections' active connections at line 137 in file classes/db/DbPDO.php
Site used to run without any problems. No explicit recent changes to website or modules. Hoster says nothing changed on their site which I highly doubt, but this issue should be solved on the website.
Server settings (cannot be changed)
max_connect_errors: 100
max_connections: 5000
max_user_connections: 25
Looking for the root-cause and solution. Not a dirty work-around.
