Include symbols in PowerShell script

I have a PowerShell script that combines characters and store them in files.
Through the script I can...
1. determine the characters (symbols) that will be used (without spaces).
2. determine the number of characters that each set will contain (e.g. 10 characters per set)
3. the number of sets that will be stored in each file.
I have attached the script in order for you to check it.
What I want to do is to be able to include symbols inside the variable $symbols.
Example:
!@#$%^&*()_+=-{}[]:;'|\~`<,>.?/"
When I tried to do that, I got an error from the script as many of those symbols are part of the script (like " and -).
I also want to include letters from other languages (likeぎ)
as well as Unicode characters.
So I would like to hire a PowerShell developer to tell me how I can do this without affecting the functionality of the script.
