update windows XAMPP server from php 7.xx to 8.xx and ensure site is working after transition

We have a web server running XAMPP and php needs to be updated. There are a few depricated commands that will need to be fixed in order to ensure the upgraded site is working. There is no CPanel. You will work by logging into the server via remote software. Time needs to be scheduled between 5PM and 10PM EST for access to the server.
