Wordpress Homepage Maintenance & PHP- Updating, Template-Customization, (Speed)-Optimization

Hi there,
I need help with some maintenance work for a wordpress website https://whitehorse-international.com/.
Currently I am running a rather old PHP version on the web server (PHP version: 5.6.40 - PhpMyAdmin,
Apache- Server, PHP extension: mysqli), which I can't update without destroying the site, because the wordpress template won't work anymore. There are a couple of compatibility issues with certain plugins. Some plugins can't be updated without updating Php.The template is like 9-10 years old and not maintained, many functions are already disabled due to a website hack. So after updating Php, the template needs to be customized, so that it will work properly again.
Finally I need some speed optimization of the site, I believe too many unused Plugins are loaded in the browser and leads to slow response times, which Google criticises and therefore gives me a bad google ranking and crawlers stop visiting the site.
What else you need to know: Most important Plugins are the WP Job Manager Plugin which synchronizes via AllImport and a cronjob from an xml and WPML (German & English content)
So the milestones will be:
1. Backup of Website
2. Updating PHP
3. Customizing Template / Site, so that Wordpress Version and activated Plugins can be updated
