WordPress plugin & PHP customization - Numerical order issue with ACF & Categories

We are looking for WordPress plugin & PHP customization to fix an numerical order issue with two separate areas of our website. Please read the following and let us know if you are 100% confident you have the skills to fix the issues. The following may bring up some confusion or questions, I'm eager to hop on a Upwork Zoom to clarify and discuss.
#1 Advanced Custom Fields with WooCommerce Product Table
We've setup an ACF that works with WooCommerce products. This numerical field is then fed into a plugin called WooCommerce Product Table. For this list we want to follow a very specific product catalog numbering format that starts with 1.1.1, 1.1.2, 1.1.3 through 1.4.5, and 1.4.6 finishing section #1. The entire list goes through 13 sections ending in 13.4.7 and 13.4.8. The issue is that after 1.4.6 ends and section 2 starts at 2.1.1 it is proceeded by sections 10, 11, 12 & 13. A few years ago we had a WordPress PHP knowledgable developer fix the issue with some fairly simple code that no longer works as we'd changed the ACF name and with general updating on the site. The code can be seen in the attachments as a reference for ideas that may make this an easy fix. If this looks like an easy fix for you and not enough hours we'd be happy to discuss a fair fixed rate for the project.
#2 YITH WooCommerce Category Accordion Premium
A unrelated but similar numbering issue happens with this category plugin where we can not easily reorder our categories using their default capabilities/shortcode (sorted by ID, name, or the total number of items in the category). We need these categories to be in order using the same 1-13 section from a catalog. You can see the issue in the attachments.
#3 we'd have some other PHP and general site cleanup projects as well as a larger WooCommerce Product format improvement project to consider in Q2 or Q3 of 2025. We may also have ongoing SEO work if a longer-term position is of interest once the above projects are handled.
We ask that you be honest in your evaluation of our issues and let us know if you have the skills to figure out a solid code solution to our issues.
