Woocommerce products set up

Dear Freelancers, i need your support for a micro project, I have a Wordpress eCommerce operated by WooCommerce (+ some plugins or extensions connected to it as WooCoomerce Booking).
My business is an online rental of equipment for private parties and events (plates, glasses, tables, various objects, tablecloths, bright furnishings, etc.).
I'll briefly explain my teo needs:
1) I need (for some products) customers need to be able to select some variations from the product page, and that the price need to change automatically based on variations. EXAMPLE: I have some set of dishes. The price should change based on the number of pieces customer need to rent, based on the color, and based on the number of total rental days (or other characteristics).
2) The whole system has to work exactly like hotel booking system. The system should allow users to select rental dates, and see the availability of that particular item in real time (in product page). If I have 30 pieces of an item in stock and a customer book 15 pieces on date 10/12, people should be able to rent only 15 more pieces of that item on that particular day (10/12).
The system is already configured in an advanced way at this moment, but something escapes me, and I can't make the variations available for rent, and I can't get a catalog updated in real time with the availability of stock, for a given date.
