WooCommerce Tour Booking Tool Development

I'm running a hiking business in Indonesia and I'm in the process of building a new website with WooCommerce. This site will feature 6-8 different hiking trips.
Currently, I'm facing a challenge with the booking tool. The booking system needs to allow for:
- Tour selection
- Date selection (This aspect is giving me the most trouble. I need the date selection system to be integrated with a Calendar picker. This should be similar to SafariBookings)
- Number of hikers
The issue arises when the user is selecting the dates prior to selecting the tour. This is where I need expert guidance. I can create the booking feature once the tour is selected, but not in the way I need before the tour is selected.
Furthermore, I need the date selection system to account for unavailable dates dynamically. This means real-time updates as opposed to a static list of available dates or just showing a message if a date is unavailable.
