WooCommerce Booking Customization

This Wordpress website has a Campervan Rental booking system integrated using WooCommerce. CURRENTLY, the functionality works like this: Customer chooses dates, it shows the total rental rate for dates for dates chosen (for exampled 3 days at $250/day = $750 total due), then they are taken through the checkout process using PayPal. What needs to be customized is this: the rental rates need to be shown, but they are not due upon checkout. The example of $750 would be known to them, but that $750 in rental fees are due at the END of their trip, when they return the van and they pay that in person. What IS due at the time of checkout on the website in order to confirm your reservation is a $1,500 damage deposit, which they pay via the website but they also need to be informed that their rental price of $750 will be due in the future.
PayPal is already hooked up and in sandbox mode. What we need is to customize the woocommerce checkout process adding the Damage Deposit, removing the rental fees from the price due now, as well as a "due upon return" price that they will be informed for those rental fees which will be due when they are finished their trip.
