Set up WooCommerce

We are setting up a booking system using Woocommerce for transactions. The business rents camper vans. We would like the booking process to look like this: customer chooses dates for their rental, they are shown the price (total based on how many days) that will be due at the END of their trip, upon return. What they have to pay in order to confirm their booking is a deposit, a flat rate for every booking no matter how many days. Upon checkout they will pay this deposit which will confirm their booking, and the "rental fees" they will be informed of and will be due at the end of their trip upon their return. There will be a legal waiver to digitally sign.
