Product Quanity Import/Update Tracking - Prestashop

I need an experienced Prestashop Freelancer to help me implement in an existing Prestashop 1.6 eshop a new tab in Backoffice in order to track the product quantity when it is imported or updated and from whom presta user, order, etc. and when (date/time)
Also it's important to add only arrows in the quantity field instead of text field.
Finally, if it's feasible the down arrow can be combined with a permission so that it can be added to specific backoffice users.
