Need help with admin-ajax not returning data back to ajax function

I have created a load more function in a wordpress shortcode. The data is displayed ok. The user then clicks the "see more" link which runs a jQuery function including an admin-ajax php function. I can see in the response the php ajax function is working and getting the data, however the data is not returning to the jquery function. I'm happy to share screen via chrome remote desktop to debug.
