Full stack ecommerce website developent

Currently we have an eCommerce store built in woo-commerce where we have over 20+ plugins, which is a problem for me to manage. Looking to redesign the website in a custom platform where i would be able to manage the website via admin (like wordpress)
Need suggestions and recommendation, please apply with relevant samples.
