Customize WooCommerce

We are developing a Wordpress website for a boat tour company. We have WooCommerce & Bookings plugins but need some additional customization.
Two things:
- We need to be able to add or reduce available seats to a particular day, when needed. For instance, standard seat availability is 34. However, sometimes we will add or remove 17 seats for a specific day.
- We need to be able to add an additional session of a tour to a particular day, when needed. For instance, we have a standard tour that starts at 10 am. But if demand is high, we want to be able to open a 2nd tour for 2 pm of the same day, and have that tour available for online bookings.
