Creation of products and update of stock in Woocommerce through webservice or as an alternative to an intermediate database (MYSQL) by cron requests

Basically we want to have the stock updated through the physical store (POS) and the online store program, they tell us that it can be done through webservices in Woocommerce using v3 https://woocommerce.github.io/woocommerce-rest -api-docs/v3.html#introduction to alternatively create the products, but above all update the stock.
Alternatively, you can choose to do it through an alternative database in MYSQL that we create from the POS, so that we can make the queries. But I think the webservices option is still better.
