Build an API platform which grabs supplier-files/data via FTP + Scrape

I currently have a custom module/extension in php (Prestashop) which updated product QTY based on SKU from different suppliers. Later its updated on frontend for customer purchase-information - example:
"On stock at supplier, + 5 delivery days"
The data is mainly fetched via FTP (cron job) - but it can also be done via scraping.
In some cases it also fetches "future delivery dates" which is when the supplier expects a product to be back on stock if its currently out of stock (or if it restocks at this time).
This data is again displayed on frontend for customer purchase-information.
To avoid load on current site, and to gain better overview, control and verification of daily updates then I would like a site/platform/hosting/solution where this is done, and then all data will output in .csv files or similar where I then grab them and upload to my webshop.
Most of the suppliers have FTPs where the files can be downloaded, but each file output is different - so each supplier needs to have a custom setup.
I currently have a solution running in Prestashop as a module where 2 suppliers are updating 1 time pr. day.
We need to add at least 3 more, so its 5 in total.
Each supplier has between 10.000 to 30.000 SKU´s.
Additional feature,1:
Once a week I need to know which products are removed or discontinued from each supplier. This can be done either by their SKU being removed from the suppliers-files or it being marked as discontinued.
Your job is to suggest and build a solution where this data-exchange can take place - with an easy overview and control so I know it updates correctly.
I need it to be simple and easy to use.
The solution can be build in existing open source software as Prestashop, WooC., Magento or similar.
It will get its own dedicated small hosting.
Requirement:
I need clear instructions on how its build, how to edit, how to modify and how to add new suppliers - in case something needs to be changed and the original programmers is not around.
For this I need a document produceed which explains in details how its done.
Code needs to be clear and transparent.
