App Publish on Apple and Play Stores

I have my mobile app developed in Angular 12 and for native purpose I have used Cordova Phonegap to make its Android and IOS builds. My App first version is almost done but need some help to make its Android and IOS builds to publish it on Apple and Google play stores. I have both apple and google play stores registered and will provide while start working.

I also need all steps document and/or video recording as well as source files what will you do for this, so that next time I can do it by self. There should not be any dependency on developer in future.
