PDF Data Entry to Google Sheets

I have more than twenty PDF files that contain a mix of text and numerical information. I need every piece of that text and every number lifted accurately and entered into a single Google Sheet so I can work with the data in one place.
The job is straightforward but large-scale: open each PDF, capture the required fields, paste them into the correct columns of the sheet, and double-check for consistency. An eye for detail is essential—mis-typed figures or misplaced rows will break my downstream analysis.
You may use any reliable method: manual copy-paste, Adobe Acrobat export, OCR tools, or a script in Apps Script or Python, as long as the final Google Sheet is clean, complete, and precisely matches the source.
When you’re done, I’ll quickly verify a sample against the originals; if everything lines up, we’re good to mark the project complete.
