Format Google Doc to PDF for a Book Project

We need help reformatting a textbook that was written in Google Docs and properly fit it into a PDF template. There are numerous graphs that are a part of the Google Doc that will also need to be properly formatted into the final work. The manuscript was written on 8.5 x 11 but the book will be published with a 7x10 page size.

The complete manuscript is finished. We are self-publishing to Lulu and will also want an ebook version of the book.

Please provide me with your experience with doing a project like this and any examples of work is appreciated.
