Revising existing firmware and PCBA design

This is a indoor planting system, carrying smart function including a water level sensor, signal with no water will transmit to the ESP-32 and pass to the phone app.
We currently would like to change our water level sensor from the I2C signal to simply I/O signal, which will needs to redesign the PCB. On the other hand, we need to modify the functions of the water level sensor.
We are now using ESP-32 and using JTAG to do the download.
