Stripe to Manual Payments Upgrade -- 2

My adult-content site (videos and photos) currently relies on Stripe, but I need to retire that gateway and move to a fully manual payment flow that runs on simple bank transfers only. Here’s what I’m after:

• Checkout flow: When a user selects a subscription or one-off purchase, they should be shown our bank details and an automatically generated reference code.
• Admin side: I need an easy backend screen where I can mark a reference code as “paid”. As soon as I flip that switch the user’s access should activate.
• Extras: The system must send an email (or on-site notification) confirming receipt of payment, and it should store a clear transaction history that I can filter by user, date, and status.

All existing membership data, user accounts, and content access rules should remain intact; only the payment module is changing. The current codebase is already set up for Stripe, so you can either adapt those hooks or replace them cleanly—whichever is faster and keeps the site stable.
