Convert Invoice JPEG to Editable Excel

I have a single invoice saved as a JPEG and need every key detail transferred into Excel so I can keep adding to it and editing later. The data to carry over includes the line-by-line item details, the overall total, and all customer information shown on the image.

I want the spreadsheet laid out in a custom format rather than the usual straight-column export. My ideal sheet places customer information in a header block, the itemised list in a table beneath it, and the invoice totals in a clearly separated summary section. If you have a better layout that still keeps those three zones distinct and easy to expand, I’m open to suggestions.

Accuracy matters more than speed: numbers, dates, and descriptions must match the JPEG exactly, with no dropped items or typos. The finished deliverable is an unlocked .xlsx file ready for me to continue updating. If you use OCR or a script, a clean review pass is still required before hand-over. A quick note on the method you used (manual entry, OCR tool, Python library, etc.) would also be helpful for future updates.
