Odoo - Teach me ONE simple thing

This is 5 min teaching if you have it clear. i am willing to pay 50 usd, no more.
I am using odoo.sh, version enterprise v15, and I want other developers to make custom modules for me WITHOUT ACCESSING my real data.
I need you to teach me how to give them a copy of my enterprise v15 database + custom modules with NO CLIENTS/PROVIDERS/BILLS data in it.
The teaching will be on a zoom call in just a few minutes, and I need you to guide me to install it in my local pc so I can tell him how to do it.
Spanish or fluent english is a must.
