Patient-Focused Sous Vide Fusion Meals
Budget: ₹600 – ₹1,500 INR
I am developing a range of sous vide main-course recipes for hospital and home-care patients in India and I need a food-tech minded chef or nutritionist to help me finalise them.
Scope
• All dishes must be cooked entirely (or at least finish-cooked) sous vide.
• Cuisine style: fusion—Indian flavours or ingredients paired with complementary international techniques or seasonings.
• Dietary targets: low-sodium and diabetic-friendly are non-negotiable. In addition, I want clearly labelled variants that hit different macronutrient goals: high-protein recovery meals, low-protein renal-safe versions, low-carb portions, and complex-carb-focused options for sustained energy.
• Ingredients must be readily sourced in India and cost-effective for institutional kitchens.
Deliverables
1. Ten complete recipes (PDF or DOCX) with:
– exact ingredient weights, sous vide temperature & time, and finishing instructions
– plating/portion notes for a 300 kcal and a 450 kcal serving
– full nutrition panel per serving and per 100 g (Calories, Protein, Carbs—simple vs complex, Fat, Sodium, Fibre, Net Carbs, GI estimate)
2. A master ingredient matrix so hospitals can bulk-order efficiently
3. Food safety/HACCP notes specific to sous vide holding and regeneration in Indian conditions
Acceptance Criteria
• Every recipe passes <500 mg sodium per 300 kcal serving and maintains ≤12 g simple sugars.
• Temperature and time tables follow USDA/WHO safety guidelines for the stated proteins.
• Flavour profiles reflect at least one recognisable Indian spice or regional element while offering a global twist.
If you have prior experience designing clinical or diet-specific menus, especially with immersion circulators (Anova, Polyscience, etc.) and nutrition-analysis software such as Cronometer or NutriBase, your insight will be invaluable.
