Hosting Systems Manager (Proxmox, NginX, OPNsense, Ubuntu, Apache)

I run a software company that specialises in open source business applications (CRM, ERP, etc...) some of which we host and support for customers on a long-term basis.
Currently, my consultant manages our servers, however (i) this isn't his area of expertise/knowledge so a lot of stuff he has to research before doing anything and (ii) I need to free more of his time up for delivering new applications and (iii) as we grow as a business this will eventually become a full-time role.
EXISTING TECHNOLOGY STACK
- Dedicated servers from OVH
- Proxmox is used to create VM's/containers and for storage level replication between different servers in different datacenters
- Ubuntu (operating system)
- NGINX (proxy server)
- PF Sense (firewall/VPN services)....actually we want to switch to OPNsense to add WAF and Intrusion Detection & Prevention.
- Icinga (open source monitoring platform)
- Bareos (backups)
IMMEDIATE REQUIREMENTS
We need to refresh existing hardware with new and set everything up again. My partner believes that we can improve the existing setup as we do this.
ONGOING REQUIREMENTS
1. We have to do daily checks (early morning IST time) for...
- ICINGA, monitoring platform make sure everything is good and working correctly
- Backups, make sure all have been completed correctly
- PROXMOX, make sure data replication is running correctly (usually once a month replication on one VM has stopped for some reason and needs to be fixed).
Right now these checks/small fixes are taking 15-20 minutes per day on average.
2. We need someone to take full responsibility for keeping Proxmox, Ubuntu, Bareos, NGINX, Apache, and PF Sense up to date (some of this work will need to be done over weekends as we can't have any downtime during the week.
3. We will need ongoing support as/when needed for setting up new services, VMs, VPNs, backups, monitoring etc...
WORK TIMINGS
Daily checks need to be done around 9 am IST time and recorded in a log (checks complete + record all issues).
Work timings for setting up the new infrastructure isn't important as this can be done independently.
My team will migrate all applications to the new servers, however, we may need some support on a weekend for a few hours, we can let you know in advance when we may require this.
Upgrades of Proxmox, Ubuntu, Bareos, NGINX, Apache, and PF Sense, etc should only be done on a Saturday, so if any issues we have time to fix them before Monday (we can't under any circumstances have any downtime Mon-Fri on production applications).
Ongoing Adhoc support for my team creating new VM's, setting up replication/backups/monitoring, etc will mostly be required on IST time, occasionally for urgent requirements, this could also be needed IST evening time....this support we will probably need fairly quickly.
IMPORTANT
We would prefer to work with a single freelancer on an ongoing basis (not a team) who is happy to take some time to learn about our business and work with us on a long-term/permanent basis......we have a lot of work, the main challenge will be you building up trust so we have confidence in your knowledge/experience so in the first 6 months or so we will only give you a small % of the work we have available.

- That you are making good suggestions (not giving bad decisions/recommendations)
