Configure Colocation Ubiquiti EFG Hardware Firewall

Apologies, this is my first time on FreeLancer. I am going to try to specify what we have & what we are looking for more specifically to not waste anyone's time. Sorry if i don't use the proper terminology you are used to.
I am looking for help configuring our new Ubiquiti EFG - we are replacing a SonicWall 3600.
This is at our co-location facility with 20 servers (10 RDP servers, 2 web servers, 1 email server, 1 sql server feeding web servers, 3 application servers). We have about 60 IPs hosted on the servers, typically 1 per server but some have numerous for SSL certificates.
Currently the SonicWall is configured to work with the machines having external IPs but this can change if necessary.
This is a production environment, so we'll have to proceed slowly as machines can only be moved on evenings & Sundays. We are MST.
We need someone with previous Ubiquiti configuration experience as we need someone who has experience with the ins & outs of that type of configuration :)
