Setup Network for Internet Service Provider with Ubiquiti EdgeRouter and UISP

Hello everyone,
im about to start installing Wireless antennas in order to sell internet. The project will be made after one month and we are at the paperwork at this moment.
at the link below there is the setup that will be made and the antennas that will be installed. The requirements i need are below.
1) Setup the network in order to have the requirements that have been asked as below
[Should have available the timestamps (use period-start of IP assignment/end of assignment) that the private IPs have been assigned to your clients by the DHCP server in order to be able to track the clients if requested. Should also have a record of the static IPs (public or private) assigned to your customers. Finally, you should make sure that there is no possibility for arbitrary use of IPs (eg manual IP setting by your customers without informing you) as in this case you will not know who made the connection. (Using PPPoE would help in this so that authentication is done based on username/password). In addition, the NAT translations that have been made should be recorded so that tracking (in combination with the internal IPs) of each customer can be done. Finally, could also use netflow/sflow to record the connections made from each internal IP.]
2) The setup has to be and have OSFP at the PtPs so if one PtP fails the internet to go through the other antenna.
3) The Edgerouter will have 2 lines so it will be one main line and one as Failover line
4) It is neede to setup Wireguard VPN tunel to the key given.
5) make all the setups and the packages at the UISP Cloud
at the setup there will be a Tiny pc connected that can have windows or linux in order to make the logging and to have remote access to the network.
At the setup of the router of the Client can make the connections with PPPoE or Vlan its your desision with the best option in order to have safe network
AND MOST IMPORTANT IS TO BE AVILABLE SO IF I NEED SOMETHING IN THE FUTURE TO HAVE YOUR SUPPORT
