IT Server Infrastructure Administration

We have a regularly need each week to do some IT server administration tasks for two customers; the tasks vary and include configuring Veeam, managing vSphere, building virtual servers, planning VLANs, planning & implementing security and network segregation, managing firewalls.
As well as general maintenance, we have two projects - (a) building and testing disaster recovery setup, where the office server room can be replicated into the data centre, and (b) tightening security by creating segregated lans and internal firewalls.
This would suit someone who is able to step in as needed, but does not require being "on call" because that is handled already within our business - however, there is an overflow of work and we would like to be able to outsource this on a regular, and ongoing, basis
Most of our servers are Windows Server with Active Directory, and use Office 365. There are around 100 users.
