IPSE VPN ROUTING

I'm setting up an ipsec tunnel on Debian 12 using Strongswan between two servers.
The vpn is up but when I ping or traceroute the packets do not go through the vpn, they try to go instead via the open internet. I think I have a routing problem but even when I create a new route so the destination is reached via the VPN IP the packets still go to the default gateway instead of to the vpn.
