n8n Chatbot Automation POC

I'm looking for a proof of concept (POC) to automate certain tasks using n8n. The goal is to explore the capabilities of AI workflows. I would like to you to create the POC so will include any dumy web pages.

Tasks include:
1. n8n Chatbot:
- Automatically complete web application registration forms.
- Gather necessary information via user input during chat.

2. PDF and Email Processing:
- Read data from a PDF and an email mailbox.
- Populate a Google Sheet with extracted information from the pdf
- Can use ocr ai tool like mistral or something to extract the information. but id like to show the pdf in a web view with the data extracted from the pdf on the screen next to the PDF

3. Task Monitoring Workflow:
- Create a workflow to monitor task status.
- Send email reminders for pending tasks.

Requirements:
- Proficiency in n8n and AI workflows.
- Experience with chatbots and automation.
- Familiarity with Google Sheets and email processing.

Please provide examples of relevant previous work.
