Automate email workflows in n8n with local AI & API/database integration

I run n8n and Ollama (Mistral/LLaMA3) in a local Ubuntu VM. I need help building workflows that:
• fetch emails via IMAP
• extract PDF/text content
• classify messages via local AI
• move or forward them based on logic
You should also know how to work with APIs and databases, as I want to connect my ERP system and Shopware later.
Everything runs locally (no cloud services). Long-term collaboration possible.
