PDF to PDF Data Transfer Project

I require a freelancer to extract data, specifically text and numbers, from a source PDF where this data is presented in tables (see document 1 attached). The information extracted, will then be used to fill out forms in a different PDF (document 2 attached). The ideal freelancer for the job would have experience in data extraction and manipulation, particularly from PDF formats, and be able to perform this task without the need for any specific software. Data accuracy is of utmost importance in this project.
