YouTube video to piano sheet music and MIDI file

I want to learn to play Billy Joel's Piano Man. There is a great tutorial on YouTube I found: https://youtu.be/TY8xbGW4_lI
However, video creator doesn't have the sheet music and the midi file, so I am requesting a musician to use the music notes provided in the video to generate the sheet music and midi file that plays the whole Piano Man song.
The video goes through all sections of the song so the Freelancer that does this will need to use the notes to build the whole song.
