Updating my Moodle site and correctly installing a theme plugin

I have a site called sustainabilityacrossthecurriculum.xyz which has Moodle installed. I wanted to install the theme Fordson, however, I messed things up.
Firstly, I tried to install it via the Moodle itself, and was told that the limit of the upload was exceeded. So I went to the cPanel and tried to install it from there.
I created a Fordson folder, uploaded the zip file into it, extracted the files, found that it created its own Fordson subfolder inside the folder I created.
I went back into Moodle but found I could not install or use the Fordson theme.
So I deleted all Fordson folders and contents.
I tried other tracks, (I backed up the data bases, correctly, I hope, onto my own laptop) in the process of trying to install the 3.11 version of Moodle as I thought that the Moodle version and Fordson version were not compatible.
That did not work. (So I don't know what version of Moodle I have on the server at the moment).
I tried installing the Moove theme plugin, without success.
The current state of affairs at this stage is, when I log into the Moodle site, I get the attached message about plugins, etc.
So the project is:
Install the correct version of Moodle (whatever that might be - that will work with the Fordson theme).
Install the Fordson theme.
Design an attractive front page, i.e. the page that the Year 9 - 10 student , (14 to 15 year old, male and female) would not be turned off by.
I'm happy with the logo and the banner.
But the point of the website is relate the economy with the environment so colour schemes and/or background colour or images should go with that flavour.
