Repairing Collations in a Moodle database

I am looking for someone with experience repairing collations in a Moodle database. Although I have not attempted to repair the collations yet, the initial error has been corrected and I am looking for preventative maintenance. Specifically, I am looking for someone who can check and maintain the collations annually.
