Database Mapping and Documentation Consulting

I have an SQL database that contains about 180 tables stored on an azure VM. I'm looking for some help on how to best document the table structure, fields, table relations etc. I can create an ERD diagram in MS SQL Studio but looking additional ways to document the data. This is part of a larger (out of scope) project where I'll be mapping the data fields to another database for migration.
