Build a Microsoft Excel Dashboard with Junction tables and Editable Pivot table

We want to create a student progression ladder tracker. Currently we build the core database in Airtable with Junction table to create records per student over the complete tracking system, then export to excel and view in Pivot table. Attached Excel Pivot table will give you an idea. We want to do everything in Excel (or if required Microsoft Access as backend) and preferably be able to edit data in that Pivot table view itself.
