Microsoft 365 Copilot Automation -- 2

I hold a Microsoft 365 Copilot Premium licence and want to replace as much of my daily busy-work as possible with Copilot agents and Power Automate flows that run against Outlook, Excel, OneDrive, Teams and our SharePoint Document Library (I do not have access to full SharePoint sites).

Core areas I need covered
The biggest pain point lies in email management, followed by tracker checks and routine reporting. For email specifically, the solution must handle:
• Sorting and categorising incoming mail into logical folders or labels
• Auto-responding to common queries with templated yet personalised replies
• Setting follow-up reminders so nothing slips

In addition, I need structured data pulled out of selected emails—think key dates, names or numbers—so it can feed live Excel trackers or Teams updates without manual copy-paste.

Desired outcome
By the end of the engagement I should have end-to-end workflows that:
• Run automatically (or on a one-click trigger) inside my Microsoft 365 environment
• Use only the tools to which I have access—Outlook, Excel, OneDrive, Teams, Copilot and Power Automate—while storing any shared assets in the existing SharePoint Document Library
• Deliver error-free reports/trackers and timely stakeholder notifications with minimal manual touchpoints
• Include clear documentation so I can tweak prompts, conditions or mappings myself later on

Acceptance criteria
1. Working Copilot prompts or plug-ins that demonstrably execute the three email tasks above and extract required fields from live messages.
2. At least one Power Automate flow for each automated process, fully tested with sample data.
3. Step-by-step hand-off guide (text or short video) showing how to modify or extend the solution.
