Retype Medical PDFs to Text

I have a collection of typed medical reports saved as PDF files that must be re-entered manually into plain UTF-8 text files. copy-paste won’t capture every symbol or abbreviation the way I need, so I’m relying on careful, line-by-line typing.
Accuracy is everything: every measurement, drug name, and diagnostic phrase has to match the source exactly. Fancy formatting isn’t required—just clear paragraph breaks and the original headings or section labels typed exactly as they appear. Save each report as its own `.txt` file and use the original file name so I can track revisions easily.
When you deliver, I’ll spot-check against the PDFs for spelling, punctuation, and completeness. If something is off, I’ll point it out so you can correct it; otherwise I’ll sign off right away.
