MATLAB Curve Fitting and Transfer Function Assistance

I am working on a MATLAB project that involves curve fitting and deducing a transfer function from measured data. I need help with:
- Reading data from an Excel sheet and plotting the graph between two variables.
- Reconstructing a curve that fits the measured data.
- Fitting a higher-order transfer function to this curve.
I plan to use the Optimization Toolbox for this project. I would appreciate your assistance in completing this project effectively.
I will provide multiple measurements in form of excel sheets(along with the basic code) and fitted curves along with MATLAB codes are required .
