Magento Senior Developer - Profiling & Debugging

We are looking for a Senior Magento developer (architect).
We have a "complex" Magento2 cloud enteprise (2.3.1) B2G (Business to Goverment) website. The same application currently holds around 12 different stores, each of them with it's own business rules. Our application is also a marketplace (we use the Webkul marketplace extension), which adds more complexity.
We are having several performance issues, along with database "bottle necks" transactions.
We are looking for someone with experience in:
Magento profiling and debugging.
What tool do you use for Magento profiling ? (to identify code bottle necks)
Have you worked on complex projects ?
