MIGRATE EMAIL from Office 365 / Godaddy to ...

Hi Freelancer Tech Talents;
My small business is an independent security alarm monitoring and systems installation company, based in West Palm Beach, FL.
I registered my domain name with GoDaddy in 1996 just to get my business online and the 2 emails I setup with them were sufficient though not great.
In the past year GoDaddy forced customers into Office 365 for emails which is counterproductive and inefficient, to say the least...it makes me go postal.

I'm not exactly computer literate but my assistant is somewhat however after attempting to transfer emails a couple years ago and failed, and now even more complicated, we're reaching out for talent that is astute in this type of small business hosting migration.

About my Project: I'm in need of a skilled freelance to migrate my email from GoDaddy Office 365 (which should include email backup (on an external drive preferably as I don't want my business clients on the Cloud).

I'd like to migrate to the encrypted email host, Protonmail.com (now Proton.me) for business, which is Switzerland - based, but has No US support live or otherwise, if that's possible, I'm open to a US-based email host with live phone support offering ample GB and great uptime.

I'm also highly considering migrating my entire domain from GoDaddy however, my admin has searched a slew of hosts and there's always an issue. I do know I do NOT want to go with any hosts that are now owned by Endurance International Group as their support has gone to the dogs. The ones I did find one that only offer live support from 9: - 5:00 M-F which is when I'm doing installations so it's not a fit.
Any tech talent that has had small business success with a domain host would be invaluable.
Would also prefer the host offer website options vs Word Press. Also be inclusive of live support.

I've attached a screenshot of my iMac. I hope the screenshot is an adequate visual as it is a screenshot from an iphone.

Please note: iMac is a late 2013 and unfortunately the version OS X El Capitan (screenshot attached for additional info) is the highest my computer will go. Not in the budget for a newer iMac. Like I said...small business.

I'd like to have this completed by November 20th as 365 renews (every 6 Months!) on Nov. 23rd.
