Extracting Data from readable PDF with ML and AI

The purpose of our project is to create a workflow and specify what apps to use to get the data extracted.
We need also the estimation time for training the ML module.
I am looking for a freelancer who can recommend a solution from 9-20 different PDF files using ML and AI technologies. The data that needs to be extracted is dynamic, its different for each analyzed document. The purpose of the extracted data is to integrate it into our web application using API. The data points that need to be extracted are specific and I will provide a list to the freelancer. The output of the extracted data should be in the json format. The ideal candidate should have experience in data extraction using ML and AI technologies. The project requires attention to detail, as accuracy is critical for the extracted data.
At some point in the future we would be extracting also data using OCR, AWS Textract is a good solution for that.
ChatGPT does the job perfectly only the response time varies from 20seconds to 1 minutes for each document which is too much for us.
