mail server: modify to hide originating IP and machine name

We have a mail server (ubuntu 20.10, postfix, dovecot) and we want to be able to send mail through the server without having the originating IP address and machine name appear in the message header as it does by default.
In other words, if I send a mail message to my friend from my Windows laptop using my mail server, when my friend gets the message he can see my laptop's IP address and the name I gave my Windows laptop when I installed it.
We need someone to tell us how to configure the mail server to make this change.

We will then test it on our mail server and if it works, you get paid.
