E-mail server creation

We have several domains with web applications, based on different servers and domain hosting services.
We want to create a Digital Ocean droplet with an email managment system (like plesk for example) to redirect all email of the different domains on an unique dedicate VPS.
We need also to instal a spam service, a web email client and OSTicket.
The droplet must be created from new and we accept proposal to other kind of services instead of plesk or osticket.
The DNS redirect for email, email account creation and os ticket configuration can be done by ourself.
There is the possibility to be necessary to link Mailjet service for outgoing emails.
