Update Ubunto from 16.04 to current version and then update plesk to latest version

I have a web site (veedubmachine.co.uk) on Ionos server. I am trying to transfer products and categories from magento to 1.95 on ubunto ionos plesk to current version of woocommerce on siteground server. Person thats been attempting that said she cant do it because the ubinto and plesk is out of date on the current site! I dont understand why that should prevent moving info accross but.. I need either ubunto and plesk updating or the info moved accross if possible to do that without updating ubinto and plesk.
