Set up a raspberry pi to record audio in a specific way

I want to set up a raspberry pi that when it is turned on, I want a daemon to start recording audio and save it onto the microSD card on the pi (either 120 or 256gb). I want the recorded files to be saved, indexed, dated and timed and for these recordings to take place between the hours of 6:00am until 10:00pm i.e. 16 hours per day, with the time being set to GMT. This should continue daily until the microsd card is full. I'm recommending a daemon here because this pi will not be approachable and will be used to record a certain type of wildlife and can't be disturbed for long periods of time (on the scale of months). The pi is stably powered but just in case there is an issue with the recording software (something linux based but good and reliable), the daemon handles this and restarts the recording software to continue to recordings.

Minimum bitrate would need to be 192kbs. I already have the raspberry pi zero (size is an issue) and am currently testing a couple of mics to see if they can pick up the sounds as they should.

Once set up, there will be no connection to this raspberry pi (no wifi / BT etc) so it must run on its own.
