Set up new server with Vesta copied from old site and set up connections with second server

Set up new server with Vesta copied (all settings) from old php site (5.4 I think) onto the new php site(7.4 I think).
Current set up is front end (7.4) on separate small server. Back end (5.4) and database on big server.
I would like to buy a new server with the front end and data together. And old php back end on a small VPS or the currently used small one.
They need to be on separate servers due to the differing php versions.
I need your expertise to help choose the right size servers and get it all working and go live.
I would also like to be able to switch back to the old front end (php5.4) on the current big server for the next few weeks if something goes wrong.
