OpenVPN / Decrypt the HTTPS/SSL traffic from Wireshark

Hi,
I am trying to sniff HTTPS traffic from my iPhone, but I am having difficulties because I need to be connected to 4G for this project so I can't use a proxy.
So, I configured an OpenVPN server, I connect to this VPN from my iPhone and I sniff the OpenVPN traffic from my server with Wireshark.
My problem: I can't decrypt the HTTPS/SSL traffic from Wireshark, I've tried everything by adding certificates etc..
The ideal candidate for this project should have experience with network troubleshooting and security analysis. Additionally, they should have expertise in setting up and configuring Wireshark and OpenVPN.
