Fix PHP/Update PHP with Centos and Nginx

The server is running on PHP and has two versions installed. 7.2.24, 8.0.20
I would like to have it run the 8.0 php, but it will not, and the 8.0 will also not upgrade any further.
since I am running nginx and centos there seems to be some weird symlink or something that will not allow the 8.0 to run on the server. I had another tech install the 8.0 but he could not get it to run in either FCig or FPM mode, it actually will not run at all and shuts the server down when trying to change to it.

There are several blog posts out there that attempt to correct the issue, but none of them seem to work for this server and I would like to have it upgraded without re-install due to the amount of configurations (DNS, MAIL) that I have running now, it would take quite a while to move to a new server.
When I run these updates, it gives me this error. (attached pics)
