BIXOLON SRP-810 Printer emulator

A program is needed to be able to create a virtual printer that will interact with the software emulating the behavior of the printer and capturing the data sent.
More explanation:
A computer will have installed the drivers of the printer BIXOLON SRP-810.
The computer will print using this drivers and the printer already installed on the computer. Printer can be installed on COM or USB.
The computer will be connected by a serial - USB cable to the ubuntu server that hosts the virtual printer.
The emulator will have to interact with the print jobs that the computer send and capture the data and create an XML file with the data sent by the computer.
The XML file will be placed on an specific folder.
Requirements:
Emulator will preferably be on ubuntu for pi orange.
Emulator must comply BIXOLON SRP-810
